!±8± How to Make Delicious Cheese Garlic Bread

One of the most important things about making delicious and fresh garlic bread is finding the ingredients. I just go to my local grocery store. No need to waste time and money going to specialty shops, unless you really need something authentic or you know about a local place with great fresh bread. It's up to you of course, just remember that the bread is usually a side dish, so you don't need to spend a lot to make it great.

The first thing you'll need is a loaf of bread. I like French or Italian bread. White or wheat are tasty, and some grocery stores have bread with roasted garlic already inside and other varieties. Try something new next time. I usually slice off as much as I need and wrap up the rest for later. Then slice it in half so there's a top and bottom side. Lightly rub or drizzle olive oil or butter on open side of each slice.

Next we need a fresh bulb of garlic. Well, fresh is relative here because it can sit a while and still be good. You'll probably only need a few cloves from the bulb chopped up into very small pieces to sprinkle on each piece before putting on the cheese.

At this point I like to sprinkle on some Italian Seasonings. You can find it at the store under the same name, it's a variety of spices that go well on garlic bread. Otherwise you can use parsley, oregano, or any other spices that would go with Italian foods.

Now we need cheese. Mozzarella is best, I like pre-shredded from the store. You can also add grated Parmesan or Romano on top for a twist.

Place it in the oven on a cookie sheet for 9-12 minutes at 350 F, or until the cheese and crust is the desired level of golden brown. Cool several minutes before eating to avoid burns.

Making your own bread

Make your own bread....healthy as you want by using a bread machine. In this video I show how simple they are to use and give a review on the one I have which is the two paddled Black and Decker model. Simple just adapt the recipes from the book or use your own. I've used this machine to make white/wheat/seed/cheese/nut/banana/olive breads, pizza dough, and there is even a setting for jams. Very simple to use....just add the ingredients and it does all the work for you. You can also set the timer so that it delays mixing so you can time it for say when you arrive home or get up in the morning. I haven't used that feature but it's not like a regular timer. There isn't a normal timer whereby you set the time for it to come on ...you "delay" the mixing/baking for however many hours you want. I don't personally like that because I don't like having things plugged in really when I'm sleeping or out of the house. For homesteaders you could simply just use it to mix the dough, then set it aside to rise and bake in your own oven.

Nothing beats the smell of bread baking in the kitchen. Sour dough bread is a special kind of bread using wild yeast and bacteria from a starter of "mother sponge." One bakery in San Francisco claims they have been using a starter that was started in 1859. This process uses natural leavening rather than using yeast cultures to make it rise. Since the starter depends on air temperature, humidity and elevation each sour dough takes on the unique characteristics of the place it is baked. The sour dough baked in San Francisco will taste quite different than one baked in Atlanta.

Here's a recipe for to make your own starter and batches of sour dough bread.

Sour Dough Bread Starter

1/2 cup Idahoan brand instant mashed potato flakes
2 cups warm water
1/2 cup sugar
2 tsp. salt
1 package instant dry yeast

Dissolve yeast in 1/2 cup water. Add the remaining ingredients and stir well. Place in a plastic bowl with a covering that has holes in it. DO NOT PLACE IN A METAL BOWL! Keep at room temperature for 24 hours.

Take out and feed with the following mixture:

3/4 cup sugar
3 Tbsp. Idahoan brand instant mashed potato flakes
1 cup warm water

Mix well before adding to starter. Let stand out of the refrigerator (8 - 12 hours). Mixture will be bubbly. Take out one cup to make your bread and place remainder in the refrigerator. Keep in refrigerator for 3 - 5 days and feed again with the above mixture. If not making bread after feeding the starter, throw one cup away. This will avoid deflating the starter.

Sour Dough Bread

1/4 cup sugar
1/2 cup corn oil
2 tsp. salt
1 cup sour dough starter
1 1/2 cups warm water
6 cups of bread flour

In an extra large mixing bowl (do not use a metal bowl), mix dry ingredients together with a wooden spoon. Add wet ingredients all at once and mix to make a stiff batter. Grease another bowl. Place dough in and turn so that the greased part is on top. Cover with plastic wrap and let stand overnight. Do not refrigerate. This is great to do right before your go to bed.

The next morning, punch down dough and knead a little. Divide into 3 equal parts and knead each part on a floured surface 8 - 10 times. Place into 3 non-metallic pans and brush with oil or spray with cooking spray. Cover with waxed paper or plastic wrap. Let rise 4 - 5 hours or all day. Let rise while your are at work. When you get home from work, it's ready to bake.

Bake at 325 for 10 minutes. Reduce oven temperature to 300 and bake for 35 more minutes. Remove from oven. Remove from pans and let cool.

The bread freezes well.
